My Newfound Love for the Slow Cooker

I learned when I became a mom that your whole life changes. I know this is nothing new to the veteran moms but to us new moms, wow! As a new mom I am finding out how to bounce around a lot. I will be washing dishes then bam Miller spits up. I get distracted and start on another project. I go to get some water from the kitchen and remember the dishes. It is a never ending cycle. I feel like a rat on one of those wheels.

Speaking of changes, my counter looks a lot different than it did before Miller. Besides bottle racks and a sanitizer on my counter, they also share space with my slow cooker. Let me say this first, I love to cook but some times I don’t have time to spend time in the kitchen. I also don’t want to miss special moments with Miller. So with my balancing act as a mom, I am going for help from my slow cooker to provide home cooked meals.

Whether you are a new mom or not, I know there are slow cooker fans out there that could use some more recipes I’m sure. I would like to share my favorite slow cooker recipes with you.

I had never had Spanish Bean Soup until my mother-in-law made it for me. In the Tampa area which I lived for the last two years, Cuban and Spanish food is popular. I put a twist on her original recipe by using andouille sausage instead of chorizo and Cuban bread for French bread. This is an easy slow cooker recipe and perfect for cold or rainy days.

If you have a copy of my cookbook, New Southern Table, check out my Collard Greens-Wrapped Pork Loin. I line the slow cooker with collard green leaves to protect the pork loin from drying out while cooking. The best part is eating the collard green leaves after they have soaked up all of the juices from the spiced pork loin. Recipe on page 165.

Seared Beef Tips is another slow cooker recipe in my cookbook. It is one of my favorites because of its versatility.
