When I moved to Plant City, Florida, I thought the only Southern food I was going to get was my own. That was until I visited The COOP outside of Orlando in Winter Park. It was like walking into my grandmother’s house with wood floors and an array of wooden tables and mix match wooden chairs.
The food reminded me of home in Mississippi. The COOP offered everything from shrimp and grits, meatloaf, chicken pot pie, fried chicken and all the fixins. The big as your fist biscuits and moist cornbread put The COOP over the top. But wait, there was also fried chicken and waffles.
When I visited The COOP, I got to meet the owner, John Rivers. He was so nice and welcoming. Little did I know that I would be working with him and The COOP one day.
About a year after my first visit to The COOP, John contacted me about working with The COOP. I was excited about showcasing my Southern style cuisine in Florida.
As chef de cuisine at The COOP, you will see my Southern touch on the menu with our daily specials and sides. Some of my favorites specials we have offered are cornbread waffle topped with pulled pork, fried catfish topped with shrimp etoufee, bbq shrimp, and many more.
