Buttermilk-Chimichurri Dressing

Ingredients

  • 1/3 cup chopped leek (green part)
  • 1/3 cup fresh parsley
  • 1/3 cup fresh cilantro leaves
  • 2 tablespoons chopped fresh chives
  • 1 tablespoon chopped fresh dill
  • 1 garlic clove, chopped
  • 1 cup olive oil mayonnaise
  • 1 cup buttermilk
  • 1/4 teaspoon cracked black pepper
  • fine sea salt

Method

  1. Combine all the herbs in an electric food chopper. Pulse the herbs about 6 times.
  2. Add the garlic, mayonnaise, and buttermilk. Pulse 10 times. Add the pepper and salt to taste. Pulse a few more times.
  3. Serve the dressing over salad greens.
