Since my dad was diagnosed over two and a half years ago, he experienced different stages of Myasthenia Gravis (MG). Through using my cooking talents, I learned how to help him cope with whatever symptoms he was experiencing. I developed easy cooking techniques, creative snack ideas, and healthy meals for him. These tips are not just for MG patients but could be helpful to a MS patient, diabetic patient, heart disease patient, elderly individual, etc.

Chewing and Swallowing difficulties:
Textures:
Crisp- romaine lettuce vs. spring mix
Tender- cooking methods for proteins
Smooth- cauliflower “mash” vs. steamed
Protein:
Hummus- made from chick peas or other beans
– ½ cup chick peas= 7g protein
– dip or condiment
Nuts- almonds, peanuts, pistachios, etc.
almonds- 1 oz. (22 almonds)= 6.2g protein
– dry roasting
– homemade nut butters
– nut powders
Fatigue with Preparing Meals

– food processor- shred, puree, chop, slice
– grater- onions, garlic, celery, carrots
– egg slicer- eggs and mushrooms

June 7, 2013 at 12:06 pmI AM ON EMAIL AND FACEBOOK. I LOOK FORWARD TO TRYING OUT ALL OF YOUR RECIPES. I HAVE HAD MG FOR 25+ YEARS AND HAVE LOTS OF FOOD PROBLEMS AND ALLERGIES. IV-IG TREATMENTS EVERY THREE MONTHS TO REDUCE MG CRISIS BUT IT CAUSES SO MANY SIDE EFFECTS. I WISH I COULD FIND MG PATIENT WHO HAS SUFFERED FROM REPEAT MG CRISES. I FEEL LIKE I AM THE ONLY ONE. YOUR HELP WOULD BE APPRECIATED.
