Lavender Peach Cobbler with Honey Whipped Cream

I love peach cobbler! It is my Southern comfort dessert. When the peaches are finally ripe I look forward to digging into the first piping hot cobbler of the season. My recipe is very easy and versatile. You can swap out any of the ingredients to make it work for your dietary needs whether gluten or dairy-free. I infuse lavender into the peaches for a sweet floral note. The addition of ginger also pairs well with the peaches.

This peach cobbler or any for that matter is not complete without whipped cream or ice cream. I chose to sweeten my whipped cream with light, syrupy honey. It adds the perfect sweetness. You can also make a coconut whipped cream for a dairy-free version.

Lavender Peach Cobbler with Honey Whipped Cream

Ingredients

  • Cobbler:
  • 1 cup granulated sugar, divided (or coconut sugar)
  • ¼ cup water
  • ½ teaspoon dried lavender
  • 4 large peaches, peeled and sliced (about 4 cups)
  • ¼ cup (1/2 stick) butter (ghee or coconut oil)
  • 1 cup self-rising flour (gluten-free or almond flour plus add 1 1/2 tsp baking powder and 1/4 tsp salt)
  • 1 cup reduced fat milk (coconut, almond or oat milk)
  • 1 teaspoon pure vanilla extract
  • ¼ teaspoon ground ginger
  • Honey Whipped Cream:
  • ¾ cup heavy cream (chilled can of coconut milk or cream, white part only)
  • 2 tablespoons honey

Instructions

Preheat an oven to 350 degrees F.

Combine ¼ cup sugar, water and lavender in a medium saucepan. Bring to a simmer over medium-high heat. Stir until sugar dissolves. Add the lavender. Reduce the heat to low and cook for 5 minutes. Add the peach slices and cook for 5 minutes.

Place the butter in a 9 ½-inch glass pie dish. Place in the oven to melt the butter.

In a large mixing bowl, add the flour, remaining ¾ cup sugar, milk, vanilla, and ginger. Whisk until smooth.

Pour the batter in the pie dish with the melted butter.

Spoon the peach mixture evenly over the batter.

Bake for about 50 minutes, or until golden brown.

For the honey whipped cream, pour the heavy cream in a deep medium bowl. Using an electric mixer, beat until soft peaks form. Add the honey. Beat until combined.

Serve the cobbler warm with the honey whipped cream.

Notes

This recipe is very versatile. You can swap out the ingredients for gluten-free, dairy-free, etc.
