Old-Fashioned Fudge Popsicles

As a kid, the fudge popsicle was my favorite. I created a homemade version that I can feel good about giving to my son. Like the original, it has a deep, rich, chocolaty flavor, but less sugar and fat than the store-bought version.

Kid-approved!

Old-Fashioned Fudge Popsicles

Ingredients

  • 1/4 cup chopped semi-sweet chocolate
  • 1/4 cup plus 1 tablespoon light agave syrup or honey
  • 3 tablespoons unsweetened cocoa powder
  • 2 tablespoons cornstarch
  • 2 cups whole or 2 percent reduced-fat milk
  • 1 1/2 teaspoons pure vanilla extract
  • Pinch of fine sea salt

Instructions

Melt the chopped chocolate in a medium saucepan over medium-low heat, stirring occasionally. Stir in the agave, cocoa powder, cornstarch, and milk. Increase the heat to medium, and cook, whisking constantly, until the mixture thickens, about 10 minutes. Stir in the vanilla and salt. Transfer the chocolate mixture to a bowl, and let cool to room temperature.

Pour the cooled popsicle mixture into eight 1⁄ 3-cup popsicle molds, and then insert wooden sticks into each mold. Freeze until firm.

Run hot water over the molds to loosen the popsicles before unmolding.

Notes

For a dairy-free version, substitute coconut milk for the milk. Also use a dairy-free chocolate.
