As a mom of two little ones and an entrepreneur, I am always trying to balance family and work especially during this time. Instead of missing opportunities to spend with my kids, I try incorporating them into whatever I am doing like cooking. I fell in love with cooking at a young age so it is so sweet seeing my 3-year-old already developing a love of cooking. It does take a lot of patience having him cook with me in the kitchen but I wouldn’t trade the memories we are making in the kitchen for anything.
I created a special breakfast treat for Miller. It is PB & Strawberry Yogurt Parfaits. He inspired the creation of the parfaits because of his love of pb & j sandwiches. He loved helping me mix the granola and layer the parfaits. I think even more so, he enjoyed eating it. Haha! He is the best taste tester for all my recipe creations.
Cooking with Kids Tips:
- Depending on their age, kids can easily stir or whisk ingredients in a bowl. If they are too young to do this then give them their own bowl and spoon to practice.
- With adult supervision, kids can flip foods in a pan like pancakes.
- Kids can practice their motor skills by using tongs to transfer foods from a pan to a plate.
- Kids can even help with your morning routine of making coffee. Have them help with adding coffee beans or grounds to your coffee maker. They can also easily push buttons.
- Lastly, let your kids help with loading or emptying the dishwasher.
PB and Strawberry Yogurt Parfaits

- Peanut Butter Granola:
- 2 tablespoons unsalted butter
- 4 tablespoons natural peanut butter or almond butter
- 6 tablespoons pure maple syrup or honey
- 1 teaspoon pure vanilla extract
- 1/8 teaspoon ground cinnamon
- 1/8 teaspoon fine sea salt
- 2 cups old-fashioned rolled oats
- Parfaits:
- 4 (4-ounce) containers vanilla yogurt
- 1-pint fresh strawberries, hulled and diced
Instructions
For the granola, preheat an oven to 325 degrees F. Line a baking sheet with parchment paper.
Add the butter to a medium microwave safe bowl. Microwave for 30 seconds or until melted. Add the peanut butter, maple syrup and vanilla. Stir to combine.
Add the cinnamon, salt and oats to the bowl. Stir.
Pour the oat mixture onto the parchment paper lined-baking sheet. Spread out evenly.
Bake for 12 to 15 minutes or until lightly golden brown.
Allow to cool completely. Use immediately or store in an airtight container until ready to use.
For each parfait, spoon half a container of yogurt into a half pint mason jar. Top with a couple tablespoons of diced strawberries and then a couple tablespoons peanut butter granola. Repeat the layers.
Serve the pb & strawberry yogurt parfaits immediately.
