I love lemonade! My husband introduced me to strawberry lemonade while we were living in Plant City, Florida where he grew up. (Fun fact: Plant City is winter strawberry capital of the world. ) The strawberry lemonade was so good. The strawberry puree added a delicious natural sweetness to the tart lemon juice. I was inspired by that lemonade to create my own version. I can’t wait to serve it to my family on the 4th. Its bright red hue makes it perfectly festive for the 4th.
My son approves too. As a mom, I feel good about serving it to him too because it is sweetened with a honey simple syrup. Enjoy over ice and with festive straws.
Strawberry Lemonade

- Honey Simple Syrup:
- ¼ cup plus 2 tablespoons honey
- ¼ cup granulated sugar
- Lemonade:
- ¾ cup fresh lemon juice
- 1 cup chopped strawberries
- 1/4 cup diced strawberries

To make the simple syrup, add the honey, sugar and ½ cup water to a small saucepan. Bring to a simmer over medium heat, stirring occasionally until the sugar dissolves. Pour into a container and refrigerate until chilled.

In a blender or food processor, combine the lemon juice and strawberries. Blend until pureed. Pour through a fine mesh strainer over a pitcher. Discard the seeds.

Stir in the simple syrup and 2 cups cold water.

Stir in the diced strawberries.

Serve over ice.
