Super Bowl Party Foods

Are you ready for the Super Bowl? What is your favorite part? Commercials….Football…..FOOD!

My answer would be the food! (:

Let me give you my play book for the game day food.

#1 Pick a theme-

Concession food- hot dogs, nachos (try pulled pork nachos or use homemade chili as a topping), hamburgers, cheesesteak sandwiches…..

Mexican- homemade salsa and guacamole, tacos, carnitas (pulled pork)….

Mardi Gras theme (the game is being played in NOLA afterall)- my crawfish etouffee rice balls, po-boys, my stuffed muffulettas, my bbq shrimp, jambalaya…..

#2 Think ahead- make dips a day ahead, bake, smoke, or roast pork shoulder, beef, etc. a day ahead

#3 Create a do-it-yourself menu- nachos bar, hot dog bar, taco bar, etc. Lay out the ingredients and have your guests create their own food.

Ok so now that we have our game plan, lets discuss recipes.

Hamburgers- to wow your guests with the best tasting burgers, start off with flavoring your ground meat with my Miracle Marinade recipe (pg. 159) and Off-the-griddle Cheeseburger recipe (pg. 59), both in my cookbook. Offer your guests an array of toppings like sliced avocado, caramelized onions, sauteed mushroom slices, etc.

Nachos- braise, roast, or bake a pork shoulder (try my pulled pork recipe pg. 55 in my cookbook) and create pulled pork nachos or use my game day chili recipe (pg. 46)В to top your nachos

Cheesesteaks- try my Mississippi Cheesesteak recipe (pg. 56) simply prepare my roast and shredd the meat. Serve cheesesteaks with sauteed onions, peppers, and mushrooms. Offer provolone, swiss, pepperjack, mozzerella cheese, or my pimiento cheese (pg. 163). Whip up a simple horseradish cream sauce by mixing prepared horseradish and sour cream.

Salsa- try the method I learned from acclaimed Mexico City chef Enrique Farjeat, heat a little oil inВ a skillet over medium-high. Using tongs first place your whole tomatoes in the skillet and cook until the skin is black all over, flipping the tomatoes over after each side is blackened. (I know sounds crazy, right? I watched this being done and sampled the finished product so stick with me.) Transfer the tomatoes to a bowl and repeat the process with an onion (red or white) andВ peppers (jalapeno or chilies). Add the tomatoes, onion, peppers, and garlic to a food processor or blend and process until smooth. Season with salt and add fresh chopped cilantro. The salsa has a depth of flavor and has a smokiness to it.

Hey Whitney! I live in the UK and we don’t have Superbowl – but OMG I am drooling! I want it all and I want it now! Makes a good sunny day picnic menu too!
