Pumpkin Spice Granola

Pumpkin Spice season is upon us. There is pumpkin spice everything so why not granola. The warmth of the spices in this granola taste like fall. Enjoy it by itself or on top of creamy yogurt with fresh fruit.

Pumpkin Spice Granola

Serves: 2 1/2 cups

Ingredients

  • 4 tablespoons unsalted butter
  • 4 tablespoons light brown sugar
  • 1/4 cup plus 2 tablespoons maple syrup
  • 1 teaspoon pure vanilla extract
  • 1/2 to 1 teaspoon pumpkin pie spice
  • 1/4 teaspoon kosher or sea salt
  • 2 tablespoons ground yellow flax seeds
  • 2 cups whole rolled oats
  • 1/4 cup chopped pecans

Instructions

Preheat oven to 325 degrees F. Line baking sheet with parchment paper or silicon mat.

Combine butter and brown sugar in a microwave safe medium bowl.

Microwave for 1 minute.

Stir.

Add the maple syrup, vanilla, pumpkin pie spice, salt, ground flax seeds, oats and pecans.

Stir to combine.

Pour on to the lined baking sheet and spread into an even layer.

Bake for 10 minutes.

Stir.

Bake an additional 5 to 8 minutes or until golden brown.

Allow to cool and enjoy!

Store in an airtight container for up to a week.

Notes

Season the granola to taste with the pumpkin pie spice. If you like a lot of spice, then add 1 teaspoon.
