Toasted Sugar Bubble Tea

I fell in love with bubble tea 9 years ago in Shenzhen, China. If you have never had bubble tea, it is a milk tea with chewy tapioca pearls. It is a drink you can sip and eat haha. I first tried classic milk tea with bubbles. It is made with black tea, milk and sugar. I wanted to elevate the flavors of this classic with toasted sugar. Toasted sugar is achieved through low and slow cooking in the oven. The sugar caramelizes over time without melting. The flavor of the sugar intensifies to a caramel like flavor but doesn’t have the extreme sweetness of caramel. Click here for the recipe.

You can use the toasted sugar simple syrup to sweeten other drinks like coffee and mocktails. The toasted sugar has so many great uses as well. You can add a caramel flavor to scones, cookies, breads, puddings and more. Use the toasted sugar as you would regular granulated sugar.
