Chocolate Covered Creamy Lime Popsicles

When I visited Key West a few years ago, I went to every shop and restaurant that served key lime pie. I was on a mission to find the best key lime pie. I also tried a fun version, a slice of chocolate covered frozen key lime pie. It was amazing! I created a popsicle version that I think you will love as much as I do.

Chocolate Covered Creamy Lime Popsicles

Ingredients

  • 3/4 cup lime juice
  • 3/4 cup granulated sugar
  • 1 egg
  • 1 egg yolk
  • 2 teaspoons cornstarch
  • 1/4 teaspoon lime zest
  • 1 (13.5-ounce) can coconut cream*
  • 1 cup bittersweet chocolate (chips or chopped)**
  • 2 teaspoon coconut oil or extra-virgin olive oil

Instructions

Combine the lime juice, sugar, egg, egg yolk and cornstarch in a medium saucepan. Whisk until combined. Cook over medium heat, stirring constantly until thickened. This will take about 10 minutes. Once thickened, remove from the heat and strain into a bowl over a wire mesh strainer. Stir in the lime zest. Cover and refrigerate the lime curd until cool.

Scoop the top thick white cream from the top of the can of coconut cream into a bowl. Using an electric mixer, beat until fluffy. If using whipping cream, this will take longer. Fold in the cream into the lime curd until combined.

Fill 5 (1/3 cup) popsicle molds with the creamy lime mixture. Place the popsicle sticks in the molds. Freeze for at least 4 hours or overnight.

Remove the popsicles from the molds.

Melt the chocolate in a small microwave safe bowl for 1 minute and then in 30 second increments until melted. Add the oil and stir until combined.

Dip the popsicles in the melted chocolate. You may have to use a spoon to help cover the popsicles. You can also just drizzle the chocolate over the top. Wait for a minute and the chocolate will harden.

Notes

*You can also use coconut milk. Coconut cream is thicker than coconut milk. Coconut cream is not sweetened. Do not confuse it with cream of coconut. You can also substitute coconut cream for whipping cream. Follow the same instructions. **You can use dark or semi-sweet too.
