Ground Chicken Burrito Bowls

I love Chipotle’s burrito bowls. I created my own healthier and cheaper version using ground chicken. It is not only healthy and inexpensive but also delicious.

Ground Chicken Burrito Bowls

Ingredients

  • Cilantro-Lime Black Beans:
  • 2 teaspoons extra virgin olive oil
  • ¼ cup diced yellow onion
  • ½ teaspoon minced garlic
  • 2 (15.5-ounce) cans low sodium black beans
  • 1 ½ cups unsalted chicken stock or broth
  • ¼ teaspoon fine sea salt
  • ¼ teaspoon ground cumin
  • pinch cayenne
  • 1 teaspoon chopped fresh cilantro
  • squeeze lime
  • Spiced Ground Chicken:
  • 16 ounces ground chicken
  • ½ teaspoon fine sea salt
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • ¼ teaspoon onion powder
  • 1/8 teaspoon ground cumin
  • pinch cayenne pepper
  • Bowl:
  • 3 cups cooked brown rice
  • 1 cup homemade or store-bought pico de gallo
  • 1 cup homemade or store-bought guacamole
  • ¾ cup chopped lettuce

Instructions

For the black beans, heat a medium saucepan over medium heat. Add the olive oil and onion. Cook for 5 minutes, stirring occasionally. Add the garlic and cook for 1 minute.

Drain and rinse the black beans. Add the black beans to the pan. Add the stock, salt, cumin, cayenne, cilantro and lime juice. Stir until combined. Cover and cook for 10 minutes on medium low heat. Season to taste with salt.

For the spiced ground chicken, add the ground chicken to a medium sauté pan. Cook on medium-high heat, breaking up the chicken into pieces as it cooks. Once the chicken is cooked, drain the liquid in the pan and discard. Season the chicken with salt, garlic powder, smoked paprika, onion powder, cumin and cayenne. Stir until combined. Reduce the heat to medium and cook for 1 minute.

To assemble the Mexican ground chicken bowls, spoon ¾ cup cooked brown rice into 4 bowls. To each bowl, add ½ cup or more black beans, divide the ground chicken equally among the bowls, ¼ cup pico de gallo, ¼ cup guacamole and some lettuce.

    Looks delish! We call these “stack ups” in our house and add sour cream, cheese and sometimes a crunch (like fritos). But, I have never thought of using ground chicken (did I even know there was such a thing?!) and seasoning as you suggested. Will try soon! Thanks, Whitney!

      I love what you call it.
      Ground chicken is really nice to use too because it cooks in no time versus whole chicken breast or dark meat.
