The Kentucky Derby is this weekend. I have created a mock mint julep for you to sip while watching the race. This is fun to serve kids and adults alike.
Mock Mint Julep

- Mint Simple Syrup:
- 1 1/2 cups water
- 1 cup granulated sugar
- 6 mint leaves
- 2 cups ginger ale
- 2 cups cream soda
- Mint leaves. for garnish
Instructions

Simple Syrup: Simmer water in a medium saucepan over medium heat. Add sugar and stir until dissolved. Reduce heat to low. Add mint leaves and infuse for 6 minutes. Pour simple syrup in a bowl and let cool.

To prepare mint juleps, add 1 cup mint simple syrup, ginger ale, and cream soda into a large pitcher.

Serve mint julep into 4 cups over ice.

May 1, 2018 at 8:36 amQuestion, if you don’t mind! After you infuse the mint leaves for 6 minutes, do you then take them out before you let the syrup cool? I’d like to try this, as I’m having a friend over on Saturday to watch the Kentucky Derby. And I’m going to make a Derby Pie, which I’ve been dying to try for awhile now. =) Thanks!

I am sorry I saw your message late. I leave the mint leaves in the syrup. If it was something else like rosemary then I remove it.
