Watermelon Lemonade Snowball

When the temperature began to rise in Mississippi growing up, it meant the beginning of snowball season. I lived for hot, sunny summer days. The best way to cool off was with an icy snowball. If you aren’t familiar with a snowball, it is finely shaved ice that resembles powdered snow. You can order at a snowball stand from a variety of fun flavors including Strawberry Cheesecake, Banana, Green Apple, Tutti Frutti, and Wedding Cake. My order changed visit to visit. What always stayed the same was my topping. I loved a drizzle of condensed milk on top. Oh yea! It was good!

As good as the sugar filled snowball treats are. My adult self is telling me that I should create a healthier version. A version I can feel good about my son and I enjoying all summer long. So I combined my love of lemonade and juicy, sweet watermelon to create a healthy homemade snowball. Now even though I said it is healthier, it taste amazing! It has the sweetness and smooth icy texture of a classic snowball.

So cut up that ripe, juicy watermelon and freeze it!

Watermelon Lemonade Snowball

Serves: 4

Ingredients

  • 2 tablespoons light coconut sugar or granulated sugar
  • about 5 cups frozen watermelon pieces
  • 2 lemons, juiced

Instructions

Combine the sugar and 2 tablespoons water in a small microwaveable bowl. Microwave for 20 seconds. Stir until dissolved. Allow to cool slightly.

Put the frozen watermelon, lemon juice and simple syrup in a food processor or blender. Blend until a smooth, thick icy consistency forms.

Scoop the snowball into serving cups. Enjoy!
