Peanut Butter Granola

I am always trying to think of healthy snacks for my son to eat. He loves granola which is great because it it good for him, well not all granola. Many granola recipes contain a lot of sugar. I sweeten this granola with only maple syrup. I feel better if I use natural sweeteners. Also this granola is a good source of protein because of the peanut butter. After I bake the granola, I like to add in dried fruit like blueberries or cranberries. You could also add dried apple slices or strawberries. If your child cannot have peanut butter, substitute it for almond butter.

Peanut Butter Granola

Serves: about 2 cups

Ingredients

  • 2 tablespoons unsalted butter
  • 4 tablespoons natural peanut butter*
  • 6 tablespoons pure maple syrup
  • 1 teaspoon pure vanilla extract
  • 1/8 teaspoon fine sea salt
  • 2 cups old-fashioned rolled oats
  • 1/4 cup dried fruit (blueberries, cranberries, apples, or strawberries)

Instructions

Preheat an oven to 325 degrees F. Line a baking sheet with parchment paper.

Add the butter to a medium microwave safe bowl. Microwave for 30 seconds or until melted.

Add the peanut butter, maple syrup, and vanilla. Stir to combine.

Add the salt and oats to the bowl. Stir.

Pour the oat mixture on the parchment paper lined-baking sheet.

Bake for 10 minutes. Stir.

Bake for another 4 minutes or until slightly golden brown. Allow to cool for 5 minutes. Optionally stir in the dried fruit.

Notes

*I use a natural peanut butter that only feature peanuts and salt.
